Khalid arrives at the spice stalls before the first call to prayer. Cardamom, dried limes, black cumin — each pouch weighed by smell as much as by scale. The lamb has been underground since yesterday.

The truck's tight galley becomes a bakery. Flour on every surface. Rania folds rakhal dough by feel — thin enough to see light through, thick enough to hold the chutney.
