Khalid arrives at the spice stalls before the first call to prayer. Cardamom, dried limes, black cumin — each pouch weighed by smell as much as by scale. The lamb has been underground since yesterday.

Morning
Dough prep in the galley
The truck's tight galley becomes a bakery. Flour on every surface. Rania folds rakhal dough by feel — thin enough to see light through, thick enough to hold the chutney.
Mid-Morning
First pin drops on socials
"We're at the Ghubra industrial flats today, next to the water tower. Parking for 30 minutes then moving to Al Khuwair." The queue starts forming before the truck even stops.
Lunch Rush
Chaos, beautifully managed
Construction crews, students, a woman in a business suit. Everyone gets the same: shuwa, rakhal, a cup of karak. The window never closes. The motion blur is real.
Quiet Hour
Knives resharpened. Stock counted.
The afternoon belongs to the crew. Knives on the stone. New batch of date chutney started. Someone sleeps in the cab. The desert light goes long and gold.
Evening
String lights. Second service.
The evening pop-up is different — slower, families, the embassy crowd who found us from three streets away following the smoke. The lamb is even better at dusk.
